Chai is such an integral part of the Indian culture that it is virtually impossible to avoid when traveling through any part of the Indian sub-continent. Even when fresh cold water cannot be found, you will inevitable encounter a "chai-wallah" or chai seller, yelling out "chayee! chayee!"
Indian chai is typically made using a rich black tea, usually an Assam, and brewing it with milk, cardamom, cinnamon, ginger, cloves and pepper. The drink produces a warm soothing beverage and engenders a wonderfully calming effect on the body. We’ve taken the soothing aspect of this blend one step further and added a dash of Vanilla. The addition of vanilla adds a hint of creaminess to this tea - with fantastic results! Brew this tea piping hot and add some sugar to help open up the exotic flavours of the spicy blend that makes up this tea. Just try to stop at one cup!
NOTE: Turn your bag, or tin of chai upside down a few times as the powdered spices can settle to the bottom of the bag in transit.
There are many ways to prepare a chai - even within one family! Here at Brackendale tea Co this is how we do it; half-and-half of your milk of choice and water, brought to a simmer, add a teaspoon of tea, allow it to simmer gently for 2 minutes then remove from heat and allow it to "sit" for a further 2 minutes. Strain and sweeten to taste. If pressed for time, prepare as for a black tea and add milk/sugar to taste.
