Craving the sensual spices of a great chai without caffeine? You have just found your match! Rooibos is well known to be one of the most relaxing hot beverages one can brew. The needle shaped leaves of the Rooibos bush produce a caffeine free drink that is noted by nutritionists and health consultants the world per for its soothing character. Masala Chai - with its base of finer, cardamom, cinnamon, coriander, clove and black pepper is generally considered to be one of the more overtly spicy examples of all blends.

Interestingly, the mixture of these two distinct characters give this chai a lovely sense of balance. Brew yourself a cup, sit back and it will all start to make sense. As with other chai blends, the complex character of the blend can be wonderfully opened up when prepared with warm soy or whole milk.

There are many ways to prepare a chai - even within one family! Here at Brackendale Tea Co this is how we do it; half-and-half milk of your choice and water brought to a simmer, add a teaspoon of tea, allow it to simmer gently for 2 minutes then remove from heat and allow it to "sit" for a further 2 minutes. Strain and sweeten to taste. If pressed for time, prepare as for a black tea and add milk/sugar.
